Healthy salads in a jar begin with homemade dressings of olive oil and vinaigrette, followed by crunchy vegetables or beans. Next is a layer of lighter ingredients like fruits and soft veggies like strawberries, corn, mushrooms or peppers. A 4th layer is for grains, nuts, seeds and dried fruit followed by a layer of greens rich in antioxidants like kale, spring mix or arugula. You can store your salad in a jar for up to 5 days. When ready to eat, tip the jar over and let the dressing marinade the salad and enjoy!
Healthy in a jar doesn’t start or end with salads- you can also make soup in jar. Here is how. Start with a base of soup stock paste, miso, or curry paste. Add a few teaspoons of flavoring extras like hot sauce, soy sauce or sesame oil. Next add a layer of frozen vegetables like corn or carrots, fresh mushrooms or a hardboiled egg. The first layer is noodles use cooked udon, rice or shirataki noodles or dry vermicelli or maifun noodles. Finish off your soup with fresh herbs, green onions or sprouts. Just like before when you are ready to eat- remove the jar from the fridge, add boiling hot water, allow to sit for 5 minutes and enjoy!
