Tina McDermott, the self-described “Lazy Inspirational Chef” is back with some more interesting healthy recipes for you and your family to enjoy this fall season. On this episode she prepares curry squash soup and ratatouille- a stew of eggplant, peppers, tomatoes, and squash or zucchini.
Tina’s version of ratatouille is made with a cashew cream sauce as the finish.
Tina decided to top the Curry Squash Soup with some fresh parsley but you can also you use fresh cilantro
