With Valentine’s Day fast approaching everyone has hearts on their minds! In honor of heart health Tina McDermott prepares some meals that are warming and good for your heart. On this episode Tina makes shrimp scampi with zucchini noodles or “zoodles” and roasted beets and Brussels sprouts with walnuts and goat cheese.
Make your Zoodles using a Zoodler or Veggetti. Start with garlic and onion in the skillet and add a little red pepper flakes, a little sea salt and black pepper,
add the shrimp to cook. Once the shrimp are mostly cooked add the zoodles to the skillet. To garnish use some parsley and freshly grated parmesan.
Quarter brussel sprouts. Scrub beets and cut off any pieces that are stubs. Slice the beets into chunks (use red and golden beets)
Add two cloves of garlic. Sprinkle sea salt on top, about a tsp. Add Fresh Ground Black Pepper. Drizzle Olive Oil over the top. Add goat cheese and walnuts to the top, to finish the dish drizzle a bit of maple syrup or honey.
Olive Oil is an Omega-9 fatty acid and is really good for your heart. Substituting Zucchini for pasta is a great way to curb carbs. Beets are good for your blood and circulatory system. All of which are great reasons to give these recipes a try this heart health month of February.
