In Honor of the Month of March and St. Patrick’s Day Chef Tina McDermott is serving up Paleo Irish Stew on this episode of Tina’s Joyful Kitchen. As always Tina offers up substitutions for dietary restrictions as well as a wealth of knowledge about nutrition and optimal health.
The Paleo Irish Stew is chocked full of hearty vegetables including carrots, turnips, and celeriac. Its thickened by tomato paste beef stock and beer!
The salad is a refreshing compliment to the filling nature of the stew- zesty orange, crisp greens, crunchy almonds and goat cheese with a handmade olive oil based dressing.
