On this month’s episode of Passport to Flavor, Chef Ripley teaches us how to make falafel in honor of Ramadan. Ramadan is celebrated February 28-March 29 this year, and is observed by Muslims worldwide as a month of fasting, prayer, reflection, and community. Falafel is a popular middle eastern dish (or often street food!) that can be made both quickly and inexpensively. Ripley shows us his techniques–like selecting the right chickpeas and flattening the falafel balls into patties.
